Black Cherry Chicken Spring Rolls

Impress your guests with these easy but delicious Chicken Spring Rolls. They only take a few minutes to prepare and are perfect for dipping! If you want to kick the heat up a notch, mix the filling with your favourite Pepper North hot sauce to suit your taste.

INGREDIENTS:

• Spring roll papers
• Shredded chicken
• Shredded cheddar cheese
• Bell pepper finely chopped
• Green onion finely chopped
• Salt & pepper to taste
• 1 egg and 1 tsp of milk
• Your favourite Pepper North sauces for dipping or to mix into the filling

DIRECTIONS:

• Take shredded chicken, shredded cheddar cheese, bell pepper, green onion, salt and pepper combine in bowl until well mixed.
• In a separate bowl whisk together egg and milk to create egg wash.
• Place spring roll wrap so it is a diamond shape rather than square. Place 2 tbsp of chicken mix and place in the middle of spring roll wrap.
• Fold in two side of the diamond so the triangle points are touching. Fold the side closest to you over the middle section and roll tightly.
• Take your egg wash and brush over the wrap to seal.
• Place spring roll wrap on your surface so it is a diamond shape rather than square. Place 2 tbsp of chicken mix and place in the middle of spring roll wrap.
• Fold in two side of the diamond so the triangle points are touching. Fold the side closest to you over the middle section and roll tightly.
• Cook at 400 degrees Fahrenheit for 8-10 minutes or until gold brown.
• Dig in!
